Nariyal Gobhi Curry With Special Til Roti Recipe - Made with Nourish Chakki Fresh Atta

You’ll need:
Ingredients for nariyal gobhi curry:

  •  500 grams gobhi , cut into pieces
  • 1 onion, sliced thin
  • 1 cup milk
  • 1/2 cup cream
  • 2 cloves (Laung)
  • 1 bay leaf (Tej Patta)
  • 1 inch cinnamon stick (Dalchini)
  • Salt as per taste
  • Few sprig curry leaves (Kadi Patta)
  • 2 tablespoons Desi Ghee

Ingredients For Masala:

  • 1 chopped onion
  • 5 garlic clove
  • 1 inch ginger
  • 1 cup fresh grated coconut
  • 1-1/2 tablespoon coriander seeds (dhaniya)
  • 8 dry kashmiri red chili
  • 1-1/2 teaspoon cumin seeds (zeera)
  • 1/2 teaspoon turmeric powder (haldi)
  • 20 grams tamarind

Ingredients for dalchini zeera rice:

  • 2 cup basmati rice
  • 1 teaspoon cumin seeds (zeera)
  • 1 inch cinnamon stick (dalchini)
  • Salt to taste
  • 2 tbsp desi ghee

Ingredients for special til roti:

  •  2 cup wheat flour
  • ½ cup til powder
  • Green coriander leaves
  • Salt to taste
  • 2 tbsp desi ghee

Method to prepare nariyal gobhi:

  1. Half boil large pieces of gobhi in water and add salt to it.
  2. In a kadai/pan add 1 teaspoon ghee. Roast coriander seeds, cumin seeds, dry kashmiri red chili; one by one until fragrant. Once roasted remove from pan and set aside to cool.
  3. Once all spices are roasted, into the same pan, add sliced onions, garlic, and ginger and roast until onions start to turn brown.
  4. Now add fresh grated coconut, and continue to roast until coconut start to turn golden brown. Remove from pan and set it aside.
  5. Once all the roasted spices and onion-coconut mix cools down, add them all to a blender and blend into smooth paste by adding tamarind juice( imli ka paani).
  6. Now, take another pan; add ghee and saute sliced onions also add curry leaves, Cloves (Laung), Bay leaf (tej patta), Cinnamon Stick (Dalchini) ;mix well.
  7. Add the grinded masala paste and cook until oil/ghee separates from the sides of the pan.
  8. Add the gobhi pieces and give it a good mix to ensure all gobhi is coated uniformly with the masala. Cook for 5 minutes with constant stirring.
  9. Now add milk and salt to taste, bring it to boil Reduce flame to medium, cover and cook until gobhi well done.
  10. Once gobhi is cooked well, add cream, reduce flame to low. Wait for a minute or two and turn off the flame.

Method to make special til (seasame) roti
1. Take wheat flour, add til powder, salt, ghee and knead it well with water to prepare a soft dough.
2. Roll the dough, apply ghee on it and spread til and green coriander leaves; fold it into layers. Roll it and make the roti in tandoori style.

Method to make dalchini zeera rice

  1.  Take kadhai, add ghee, dalchini and zeera to it till it fragrant.
  2. Saute it after adding rice. Add water and salt to taste.
  3. Reduce the flame and let it cook for 20 minutes.”
